This is a Christian interpretation of Isaiah, that does not mean that the Jesus of Christianity was intended by the author of Isaiah, but Israel itself.

Actually it only demonstrates that the Book of Isaiah can be dated to at least the second century BC nothing less and nothing more. It could have been falsified(?) prior to the second century BC. The problem remains that prior to this we have no comprehensive scripture of the OT texts, and the history of the texts of the OT can only be dated indirectly to ~1000 to 700 BC, and at this time we have very little. The author and dating provenance of the texts of the OT are very weak at best. History and text analysis indicates that most of the books of the whole Bible lack original authors and have evolved through multiple sources.

If anything it does more to confirm Judaism and their scripture, but in reality it does nothing for or against the claims of Judaism, Christianity and Islam.

And much of Jewish scripture came from the Ugarit.

Some of that too.. They have been translating the Ugarit tablets since the early 1940s.. Scholars know the truth. Prior to the discovery at Ras Shamra Judaism was the authority.

If Jesus was a Jew then he would have been recognized. From what I've heard Jesus had very little knowledge of Judaism and could never have been a rabbi.

No it wasn't - according to the source you linked to, compared to the Masoretic text the "Great Scroll of Isaiah" contains "well over 2,600" textual variants "ranging from a single letter, sometimes one or more words, to complete variant verse or verses".

In any case no version of Isaiah says anything about Jesus unless you want it to - and clearly the Gospel writers wanted it to. There is no mystery here.
