Rabbi Avdimi bar Ḥama bar Ḥasa said: the Jewish people actually stood beneath the mountain, and the verse teaches that the Holy One, Blessed be He, overturned the mountain above the Jews like a tub, and said to them: If you accept the Torah, excellent, and if not, there will be your burial.
Yeah, for that particular event, we weren't given a real choice. Although the Talmud does go on to say that after Haman's death, we came to terms with it, and re-affirmed our choice.Ouch! So much for free will.

No, we follow the Seven Noahide Laws, which could more rightfully be designated categories of laws.
Here they are as enumerated by Chabad:
Acknowledge that there is only one G‑d who is Infinite and Supreme above all things. Do not replace that Supreme Being with finite idols, be it yourself, or other beings. This command includes such acts as prayer, study and meditation.
Respect the institution of marriage. Marriage is a most Divine act. The marriage of a man and a woman is a reflection of the oneness of G‑d and His creation. Disloyalty in marriage is an assault on that oneness.
Chabad is an organisation of Chassidic, Orthodox Jews. It's probably the most well-known. They are, to my knowledge, first recorded in the Talmud. We have knowledge however, that there were people call G-dfearers in ancient Jewish societies. When these first became a known-group I am unsure. One is not allowed to erase the name of G-d, so it is not written fully so if it is erased it is no concern. Although this isn't necessarily a requirement in English, it passed from one language to the other and is now just a custom it seems.
