In the 15th chapter of Acts of the Apostles Luke writes about God's servant Paul.
Paul wrote at Romans 10:12 that in showing honor to others to take the lead.
When the circumcision issue was Not settled I find it interesting how Paul handled it at Acts of the Apostles 15:22-31.
With humility and modesty Paul went along with the arrangements of the governing brothers in Jerusalem.
They (Not Paul) reached a decision and ' they ' chose to assign Paul to be one of their messengers.
Notice they referred to God's servant Paul as their beloved brother at Acts of the Apostles 15:25.
It was simply a sign between the God and his people Israel. The Sunday observance is the sign between the "dragon", the sun god, and his followers. A bad sign to have (Revelation 14:8-9).

A week only has seven days. You got it wrong, your 8th day should be 1st day.
This was done by the Catholics, perhaps as a fulfillment of prophecy:
Daniel 7:25-26 25 And he will speak even words against the Most High, and he will harass continually the holy ones themselves of the Supreme One. And he will intend to change times and law, and they will be given into his hand for a time, and times and half a time. 26 And the Court itself proceeded to sit, and his own rulership they finally took away, in order to annihilate [him] and to destroy [him] totally.Or, perhaps this refers to something else.
Once you say Sunday is the the 8th day, you loose cohesion and the relationship to it being the first day of the week. You go beyond the week, into a daily count of the year's 36x days.Sorry, but an 8th day follows the 7th day of creation. That it should be the 1st day of another week is noted in the OP.

There were no "Christians" directly after "Christ's resurrection". Paul's persecuted the followers of Yeshua, for some time before he established his "Christian" church, which by the way, their creeds are antithetical to the teachings of Yeshua. The followers of Yeshua were Jewish, and kept the Laws of God. The followers of Paul, were Gentile, and saw no need to follow the Laws of God. If the foreigner wants to worship on God's mountain, they need both to keep his Commandments, and His Sabbath. (Isaiah 56:6).

There isn't a day of rest for Christians. That's an Orthodox hold over from the OT.
Days aren't holy nor spiritual.
That's true of anything. God consecrates, not man.They are if the people declaring them to be so say they are.
So,The 8th day, the day after the 7th day, the Sabbath rest of God. That will be the day of the great white throne judgment, and the event horizon, known as the 2nd death.
If you like the Sabbath then go for it. No one's stopping you. As for me I believe the Sabbath is coming(we have the earnest of our inheritance now if we receive it. see Isaiah 28:12) and we wait for God's real Sabbath as the 7th day when God Himself will rest and we may rest with Him. People who believe that the Law is still to be obeyed now after the resurrection cannot explain why Jesus said the time comes when they will not worship in Jerusalem but in Spirit and in truth. So the Sabbath - God's real rest is coming. Jerusalem - the new Jerusalem is coming. etc.

The eighth day in the Law (Lev 23:36) has to do with an offering by fire.

'For seven days you shall present an offering by fire to the LORD. On the eighth day you shall have a holy convocation and present an offering by fire to the LORD; it is an assembly. You shall do no laborious work.
