What are you eating?

Breakfast wrap and an egg salad sandwich from Chevron? I think I consumed about 2,000 mg. of sodium in that one meal...

And don't forget about 24 oz. of their French Vanilla Cappuccino... sugars and fats all blended together!

I love quinoa! It's super easy to cook, even easier than rice and it's amazing how much food one cup produces. I usually stir fry it with some veggies, and then add some pasta sauce. Pesto and Rosa sauces go well. Bacon too.

Oh, and word of warning. The cooked grain looks like there's some tiny larva curled up inside of it; these will often detach as well, so your bowl may appear to have a lot of tiny maggots. This is normal. Your box was not contaminated.

I imagine quinoa would be just as good in a cold salad as well.

Just a quick factoid for you RFOG, did you know a regular can of pop (not diet) contains 12 teaspoons of sugar?

And did you know the average Canadian consumes 150lbs of sugar in a year?

Absolutely terrifying!!! You need to be vigilant about sugar - just as much as fat and sodium.

One good rule of thumb, when grocery shopping, buy most of your groceries on the outside walls. Stay clear of the inner isles - they are isles of early death and disease!

(I know a bit since I've been taking cardiac rehab education classes with my husband who has been diagnosed with coronary artery disease and has had 5 stents placed in his clogged arteries.)
 
Good to know as a Canadian, LOL.

I actually do not consume pop; I drink pop about as often as an eclipse.

However, my weakness is hot chocolate! :p But I drink herbal tea in general every day... moreso than water, which is what I should really be drinking!

It's terrible enough that I'm consuming these free doughnuts and muffins at work, since I started a month ago... but I know I need to curb this habit... it's just hard when it's in front of you constantly!

And the look of cooked quinoa is so cute, with them tails and all! :D

Ever since my husband almost left us suddenly this January and thanks to the medical advancements we have today which have saved his coronary arteries, we are both on quite a health kick - a new lifestyle actually. So....I have been looking up new and healthier recipes. I found one or two for Stuffed Sweet Potatoes. I took the recipe as a guide and just winged it from then on. The result: I was beaming as hubby wouldn't shut up about how good they were.

Two sweet potatoes: baked for an hour and then cut in half. Scoop out the insides and put in a medium sized bowl.

Meanwhile, while the potatoes are baking, cut up a small onion and with a little olive oil, fry them up. When the potatoes are almost done, throw in some baby spinach into the pan (I used a healthy handful) and some grape tomatoes cut in half, and some chopped pecans. If the spinach doesn't wilt right away, add a bit of water. Stir everything together.

Pour the onion/spinach mixture into the bowl with the potato pulp, add about a half a cup of goat cheese and mix well. Then scoop out the mixture and place even amounts into the four potato shells. I put a dob of goat cheese on top of each one and back in the oven for a few minutes to heat up. You could add skim mozz cheese on top too. Or sprinkle with parmesan.

Eat and enjoy. Simply yummy! These potatoes are a meal in itself, but we cooked up a couple of skinless, boneless chicken thighs to go along as well.

And for dessert, we had chocolate tofu pie with ground flaxseed in the graham crust!

Stupendous! Healthy eating is where it's at, people!:yes:

It was on fire when I laid down on it.
Just got done with some fantastic pork loin that my husband smoked yesterday, along with a loaded baked potato - FABULOUS!

I would feel guilty about such decadence but I've been working all day putting up Christmas decorations. I had worked up a serious appetite!

refried leftover quinoa with cauliflower, lots of fresh coriander, ginger, and a bunch of Indian spices too numerous to mention ... oh what the heck.. turmeric, cumin, coriander , chili, garam masala, mustard seeds, salt
 
A simple cabbage and broccoli sabji (savoy cabbage, broccoli, cumin, tumeric, hing, chili powder, salt, dried fenugreek leaves, cream) and rice. :)

Except that I didn't know savoy cabbage would have a slightly bitter taste... :p
