Squash in curry!
Cut it into 3 sections crosswise, put each piece on its cut end, and pare the skin off with downward slices.Well there is the tried and true baked squash with butter and brown sugar. How do you even peel a squash? They seem to be too tough to do that properly while raw.
Easy ones that probably don't qualify as recipes.
I discovered these a few years back through one of the local organic farms:
The prep makes it my favorite squash ever. Cook. Scrape. Add butter, salt, parmesan. Serve. Done.
I'm ready for some butternut squash lasagne. How about you?

Oooh... I may have to try that. I've got like five of the buggers lined up on the top of my fridge.I prefer mine with peanut sauce.
Back when I had an oven (and a knife to cut squash) I used to slice a spaghetti squash in half, coat the inside with butter, sprinkle McCormick (fake) bacon bits or Morningstar Farms fake bacon or both, and bake for 45 minutes to an hour.Spaghetti squash are very nice, sliced, scattered with raisins a couple of cloves of garlic and cooked with butter.Easy ones that probably don't qualify as recipes.
