Can't brain. Has dumb.
Ok, there's always been a debate on where this recipe originates from - Australia or New Zealand. But that doesn't matter. Point is, it's a huge desert hit in this corner of the globe, and although best for summer, it still tastes the same in winter!

Ingredients:
3 large fresh egg whites
175g (I think it's 6 oz( caster sugar
Cream
Fruit

Pre-heat the oven to 150 C (300 F)

Whisk the three egg whites until they form soft peaks and you can turn the bowl upside down without them falling out. But DON'T over-whisk them because they'll collapse. Slowly add the sugar (1/6th of sugar at a time) and whisk it in.

Spoon the mixture onto a sheet of baking paper (which you have already put on a baking tray) into a 20cm diameter circle. If you want to make mountains on it then take a skewer or something like it and poke the mixture to make mountains. (looks purty)

Put it into the oven and turn down the heat to 140 C.

Bake for an hour.

When it's done turn off the heat but leave it in the oven till it's cold. (or - room temp - leave overnight if you can). This dries it out and makes a better pav.

Now, whip the cream with a bit of sugar (or use a can if you must) and coat the cake in it. Top with strawberries and kiwifruit - or other summer fruits. For winter, just before serving it's good with hot stewed fruits.

This is also good for throwing at people!!!!! :p
