Two separate, but related concepts. A prophet is a person who gets messages. Hermes is a messenger. The word "angel" means "messenger," so Hermes would be an angel in that regard, albeit somewhat of a trickster angel.

Hermes Trismegistus is the "person" referenced in the Corpus Hermeticum, which dates to ~ 2nd century ce.

Hermes was in the Greek pantheon. Mercury was the equivelent in the Roman Pantheon.
