Leviticus 27

Does anyone know why Leviticus 27:1-7 lists males as having more value than females?
Because they were more of an asset than women. Outside of satisfying sexual needs, making an edible pot of porridge, and weaving a decent tunic or two women were of little value to a society. And of these only one was pretty much exclusively theirs.

They were considered of no value.
