I want to consume Japanese popular culture as I am learning Japanese

Does anyone have any recommendations?

I am familiar with the Studio Ghibli stuff, but that's about the extent of my familiarity

Have you tried takoyaki? It certainly is a popular snack in Japan.
I wonder if it tastes like calamari...

There is a channel on youtube owned by a Japanese guy who asks people in the streets of Japan all kinds of things related to Japanese culture or how Japanese people look at Western things.
I visit this channel every once in a while and found it very interesting.
Here is an example of one of his videos.

I was able to combine learning Japanese culture and learning the language in Aikido, Kendo and Iaido Arts of the Way. I learned the Tea Ceremony, meditation, culture and history suplimented by independent study.

So happy you asked :)

Well here's some anime I'd recommend:
Death Note
Noragami
Bungou Stray Dogs
Kimi no Na wa
Tenki no Ko
Tokyo Ghoul
Shingeki no Kyojin (Attack on Titan)
Ansatsu Kyoshi'tsu (Assassination Classroom)
Charlotte
Steins;Gate
Re:Zero
Kono Subarashii Sekai ni Shukufuku o! (Konosuba)
No Game No Life
Dr. Stone

Might be a little weird starting out with the different culture and all. But it's worth it.

I wonder if octopus tastes like squid...
I would not really know. When I go to the sushi bar where I do regularly order tako (octopus) it is cooked. Squid is usually raw at sushi bars. I usually like various raw seafoods but raw squid tastes a bit "soapy" to me. Though it is rather tasty when mixed with natto.
