The Sun and Moon are majorly recognized in Germanic religions, as well as there being a few constellations. But there's nothing really in terms of Zodiac signs or the like.
Do you know of good resources about it?

None directly. The sun, moon, and constellations like Thjazi's Eyes are featured in the myths. The constellations that I know about come from Stellarium; a digital planetarium with various cultural star lore. There are constellations in the video game Jotun, but as of yet I have been unable to verify if any of them actually existed.
