In france decent pancetta is difficult to get. Lardons is what i use, which short strips of thick cut bacon.
I can buy "pancetta" here but I have no idea what the quality is. Guanciale can be ordered through Amazon, but I do not think any local stores carry it.
And I guess most of the Italian chefs that I have listened to on YouTube have been southern Italian ones since they all seem to hold cream sauces in low esteem. I have had some very tasty dishes with cream sauces. And once I followed what was supposed to be an original fettuccine Alfredo recipe and was not too impressed. Give me the cream based version.
