In france decent pancetta is difficult to get. Lardons is what i use, which short strips of thick cut bacon.

I can buy "pancetta" here but I have no idea what the quality is. Guanciale can be ordered through Amazon, but I do not think any local stores carry it.

And I guess most of the Italian chefs that I have listened to on YouTube have been southern Italian ones since they all seem to hold cream sauces in low esteem. I have had some very tasty dishes with cream sauces. And once I followed what was supposed to be an original fettuccine Alfredo recipe and was not too impressed. Give me the cream based version.

And when it comes to carbonara I guess that the New York Times almost caused an international incident. They added (gasp) tomatoes to the mix:

Interestingly enough the article claims that the recipe is relatively recent and only appeared on menus after WWII.

Excellent....as long as there's none of that Russian dressing.

Corned beef, Swiss cheese, mustard, pickles, sauerkraut, and.... oops, a little bit of sandwich spread. I have passed on the legacy to the grandchildren.

If you ever try it, I recommend not putting Russian dressing on it.
That goes with squid & even worse than corned beef.
