It's that time of year again...

Fresh dug new potatos. I just love them.

Lightly scrubbed (not peeled), patted dry, popped into a bowl with a chunk of marge (or butter) on top, cover with cling film and nuke for 12 minutes in the microwave.

Crush the potatoes (not mash) mix in with the melted butter. Add a bunch of washed and roughly chopped fresh mint leaves, salt and pepper. Serve with whatever you serve with potatoes.

Simple and delicious

I love new potatoes. When I can get them. They have stopped calling them "new potatoes" but when small potatoes were first marketed at my grocery store they were called that. In the middle of winter!

Warm goats cheese and fig salad


3 rounds of soft goats cheese per person
2 or 3 figs per person.
A handful of shelled walnuts per person (cerneau preferred but peaces will do)
Lettuce
Tomato (heratege preferred)
Cucumber
Baguette
Balsamic vinegar

Lay the lettuce on plate
Slice the tomato scatter on the lettuce
Peel, slice in half and de-seed the cucumber cut into chunks, scatter on the lettuce
Slice the figs in half and scatter them on the lettuce.
Cut the baguette into 1/2 inch slices, one slice per cheese
Toast the baguette slices.
Place a cheese on each slice of baguette
Pop under the grill until the cheese just begins to melt
Place 3 cheese toasts on the salad.
Scatter the walnuts
Lightly sprinkler the balsam vinager.

We had this tonight, delicious.

Cornbread Italian-style...with olive oil, rice starch. Gluten-free



I've never made cornbread with olive oil, but I'd try it sometime. My favorite way to bake it is in a cast-iron pan, it gives the best crust. That cornbread is a bit more compact than I'm used to, maybe because of the rice flour. But it looks nice!

Current favorite way to have avocado toast: drizzle it with sriracha mayo. Yum...

I don't care for goat's cheese, but otherwise it sounds lovely. What would be the best replacement, I wonder? Maybe fresh mozzarella?

Did you ever eat polenta? I really like it:), but my Sicilian wife doesn't. :(

It's more popular in northern Italy, btw.

It's normal.
Not so many Sicilians are into polenta or other cornmeal dishes like cornbread.
;)
Northerners for example are not into semolina bread...which is what Sicilians and Neapolitans adore.

Ya, we buy semolina quite often, such as last week.

How about couscous?

What broth do you use to water it?
Just water as we usually have it with a sauce of some sort. As you're probably aware of, couscous is very popular in and near the area of Trapani, and at San Vito lo Capo they celebrate and have a festival for it.

BTW, we're having it for dinner today with tilapia in a tomato sauce with zucchini, onions, etc.

I've never dined in the same water as a fish, let alone tomato sauce.

Do tilapia like zucchini and onions? I just know they eat plants and small animals. I had no idea they ate veggies and couscous.

I bet they would if you chop them to a size they can easily chew. The onion and zucchini might be a little tough, though. Maybe mince, or cook first?
