Substituting ingredients in spells/rituals

I don't have incense at the moment but many spells/rituals call for it.

Can I maybe just light a smelly candle along with the other candle they say?

If I don't do anything about it, if I just do the spell/ritual missing that one thing, will it make a difference?

I don't have many spices for rituals/spells either. Is there a list somewhere where they say what would be acceptable to take another spices place in a spell/ritual?

I figure someone made these spells before me and they probably just did what felt right to them so if I mix it up for me it would be fine. Am I right?

Tools are there to set the scene, to get you in the mood to do magick and ritual. You don't NEED anything but yourself and your will to make things work. If you want to substitute a scented candle for incense, a house is not going to fall on you. I've made many substitutions, like that exact one, and many more drastic ones.. it's all about what gets you in the right mood to do what you need to do, and what you have on hand.
