Im sure one of the first things science noticed when they really started digging into things, that things aren't what they seem. Easterners been saying it for thousands of years.

What is the spiritual significance to it, does spirituality get debunked or more confirmed as people learn more?

With things like water memory we find that the materials around us influencing a lot more than can be seen by the naked eye.

Is matter just energy in various frequencies? Is this what people refer to as spirituality? Can music be used to heal?

I'll go with 'confirmed' although skeptics try to obfuscate that. I believe emotional/spiritual positive and negative vibrations influence things in ways mainstream science does not yet understand, That includes water crystal formations.
