Again, this makes no sense on multiple counts. First of all, you simply avoided what I mentioned about the early church vis-a-vis Jewish Law given by God to Moses. And what do you find was done 'sort of gradually' according to Acts of the Apostles 20:29-30 but an apostasy.
So, I finds by the end of the second century the apostasy was well on its way
Secondly, what we see in Acts itself are some changes that are being made and no where are these changes condemned as being intrinsically "apostasy". During the 2nd century, much like during the 1st century, some changes needed to be made.
No church today reflects the dynamics of the original church, nor should they as times and conditions change. Even Paul went well beyond what Jesus taught, so was he slipping into "apostasy" as well as the other apostles?
Thirdly, since Jesus said he would guide his church until the end of time, and since "church" means "community", which community was Jesus referring to, especially reinforced by Paul's repeated statements that the church needed to be of "one body"?
And finally, it was the church that you say slipped into "apostasy" that selected the canon that your Bible is from, so if the church was in "apostasy", then doesn't that pretty much completely taint the Bible you use?
