I just made this recipe up for dinner, the kids loved it! The best part is it's super easy and healthy! :woohoo:
12 oz Whole Wheat/Whole Grain Thin Spaghetti
14 oz bag frozen Shrimp (medium-sized)
14 oz frozen Stir-Fry veggies
Olive Oil
chopped garlic (about one clove)
parsley (about a tablespoon)
chili powder (about 1/2 a teaspoon)
Cook spaghetti, drain. In a wok (or large skillet) heat about a tablespoon of oil, add garlic, parsley and chili powder and heat for 2-3 minutes. Add shrimp and veggies and cook for 5-6 minutes until heated. Add cooked spaghetti and mix in with shrimp and veggies, add more olive oil as needed to lightly coat pasta. Add more parsley on top (optional) and serve!
