When you guys use the word Jew, Jewish or Judaism do those words refer to the Tribe of Judah or does it include all the tribes of Israel?

Neither, I'd say, although more the second. But regardless of whether someone's ancestors somewhere along the line where from one tribe or another (or even if they have Jewish ancestors or not), if they practice Judaism, I'd call them a Jew.
