In Mass when the priest asks us to say "I Do" to several questions...i.e. Do you reject satan and all of his works" etc

what is that called? the profession of faith?

The Profession of Faith is when everyone says the Creed.

I think the proper term for what you are talking about is the Renewal of Baptismal Vows.

The proper name is the Renunciation of Sin.... it's used by the celebrant in the Rite of Baptism.
