    According to some of my early teachers, Moshiach will come if all Jews will keep just one(or two) Shabbats.
    Others have said on the 'eve of Passover'. 14 Nisan 5780 (8th April 2020) this year

    Two Shabbats are needed. One was already kept - the first Shabbat after the Exodus. Since then, always has the Shabbat been transgressed in some sort of way. So, one down, one to go. That's why nowadays they do occasionally Shabbat Olamit events worldwide, to try to get more and more Jews to keep the Shabbat.

    I suppose that if everyone in the world kept a Shabat, the that would cover 'lost Jews', ie Jews that don't know they are Jews.
    Then Moshiach would have to come.

    Seems the pope's reasoning is firstly the psychological benefits, with the religious aspects more of a possible secondary reasoning.

    According to Judaism non-Jews cannot observe Shabbat, as it's a sign between G-d and His people; at least, they can't observe it totally. If they want they can do it all except do one thing wrong, such as drive or light a fire.

    I doubt any gentile who is unaware of what are the exact laws of Shabbat would be able to keep it without even a single transgression.

    We already observe the Sabbath. I understood this as a correlation on how we can bring clarity and encouragement to an already existing practice in Catholicism.

    I don't know about that. I mean, the pope seemed to be referring to the sabbath day kept on Saturday and not the one on Sunday.
    Well, sure, there was encouragement, but it didn't sound like encouragement to keeping Sunday.
