Anyone else like to make their own pickled veggies?

I usually keep pickled red onions on hand in my fridge, because they are soooo goooood!
I'll make my own pickled daikon radish and carrots for Banh Mi sandwiches.
I've make home made kim chee a few times.
Any other lovely no-cook pickles out there I should try?

Mrs Revolt tried making her own kimchee.
Didn't turn out well.
Also, the store bought stuff is cheap & good.

I take store bought pickled diced jalapeno and then mix it 50/50 with chopped onion (usually sweet onion). This preserves the onion in its raw form for a week or so and together they make a super spice which goes very nicely with many things in the instant pot.

There is a vid you might want to see that talks about making vinegars from fruits. The presenter experiments with making strawberry, blueberry, mango and raisin. He then uses it to make some delicious looking salad dressings. Here's the youtube code: V9nfVu9zGxk
I haven't tried it, because it takes 30 days, but I am curious about it.

Not so much pickle, we are not great fans. I do pickle a jar of mint which lasts through the winter. What i do make a lot of is chutney.
