I've never heard of her! Can you tell me some about her?

From what I remember, she was created after Murugan and Ganesha left the home after growing up. She went to a beautiful garden and found a tree that granted wishes. The wish was granted, and Ashoka Sundari was born.
In Tantrik Shaktism, she is also worshipped as the daughter of Lalita Tripura Sundari.
