Greek yogurt, cucumber, garlic, lemon juice, salt, pepper, dill and/or fennel, and mint. (mint is optional, but dill and/or fennel is not.)

So, today I made some raita using Greek non-fat plain yoghurt that I added some whole milk to, four cherry tomatoes that I chopped up, parsley flakes, and black pepper. Not bad for a start, I presume. It goes well with the brown basmati rice, salad, and flatbread that I am having at the moment.

One of the best things abut Indian food is experimentation, and more importantly, the openness to it.
