Richness is good.No problem.
A spaghetti bol made with wine and diced pancetta (bacon bits to heathens) is so much more.
I am currently making a chilli with a red cahors and a couple of squares of 90% chocolate. Both add a richness you would hate ;-)

I begin to suspect that wine is one of me natural enemies.I picked up great one, rib eye steaks slow cooked for around 8 hours in red wine and various seasonal vegies... Makes the best beef stew you have ever tasted.
