Tbh the dragon George is 'slaying' is not exactly the most ferocious one I've seen.
It's more like a crocodile, so seems like he was an ancient Steve Irwin.

In the second pic the knife looks like a feather; I think this may be deliberate, as order and justice (ma'at, both a concept and a Goddess) is symbolised by a feather - so it's order and justice defeating chaos
