God created man in his own image, what does that mean?

It means that God gave us the potential to ultimately become God like; the choice is ours.

I believe that the author of that particular verse was trying to say man like God is a rational being, a creature that can utilise logic and reason by virtue of his mind.

Ie sapience above animal conciousness.

I certainly don't think the author was implying there are physical comparisons between humans and 'the almighty'.

Alternatively...
Unless of course 'God' was/is in fact an alien overlord manipulating our species lineage genetically for their own purposes (servitude?) and thus there may be room to say we and the overlords share physiological similarities, especially if they used their own DNA to augument Hominid DNA.
Sheer speculative fantasy perhaps.

Still humans are remarkably subservient at times and our evolutionly history is far from clear....perhaps our bio tech scientists and archaeologists will one day elucidate for us as to what really happened in human evolutionary history.

Anyone can use the Bible, and get 'something' out of it, but to truly understand it one must have the Holy Spirit inside him/her. We receive the Holy Spirit when we accept Christ as our Lord and Savior.

Non-Christians will never be able to make sense of God's Word. It is useless to try.
