Public opinion polls. Exit polls. Lots of analysis. For instance, they may know that only one county in South Carolina is really in play, and that all the other counties are no longer up for grabs. So they watch that one county.

Exit polling has proven shoddy in the past to be quite honest. I know if anyone asked me I would either lie or tell them to sod off.

Sometimes they're wrong, but they usually tend to be right about these projections.
