I prefer turkey bacon too, especially since turkey bacon cooks through in about a minute, while pork bacon takes a bit longer. I'd love to try bison bacon and duck bacon, as it heard they are amazing. Wouldn't mind a beef bacon either, but I haven't tried it yet. I haven't had deer bacon, but I can imagine that easily being delicious. But I sure do love me some pork...

There's a smokehouse up in Bishop, CA where they sell mahogany smoked bacon sliced or by the slab. Best bacon I've ever had.
