Cream of Cauliflower Soup
This one is a favorite in our house (and we're not huge cauliflower fans...go figure). I blend everything to make it a bit smoother, which means I can be lazy and not chop the veggies uniformly. I also replace the milk with skim ~ this brings the soup to about 250...
1 Cup of whole milk
1/2 Cup heavy cream
1 Tablespoon of vanilla extract
3/4 Cup of sugar
8 ounces of chocolate (I just use chips.)
Combine milk, cream, vanilla, and sugar in a saucepan over medium heat.
When the mixture is hot, add the chocolate and stir until it is completely melted...
I found this to be an interesting experience.
Thanks to our church's youth ministry, I had a wonderful core group of friends (about 17, though the number grew over time) back when I was in high school. For several of us, our relationships started even before then, as we lived near each other...
