If one only used the words of Jesus, his statements about God he gave in the gospels, what image of God would we have.

“Love your enemies! Pray for those who persecute you! In that way, you will be acting as true children of your Father in heaven. For he gives his sunlight to both the evil and the good, and he sends rain on the just and the unjust alike.”
Jesus Christ, Matthew 5:43-47

A merciful God.
“And so I tell you, keep on asking, and you will receive what you ask for. Keep on seeking, and you will find. Keep on knocking, and the door will be opened to you. For everyone who asks, receives. Everyone who seeks, finds. And to everyone who knocks, the door will be opened.”
Jesus Christ, Luke 11:9-10

A giving God, who listens to us

“My sheep hear my voice, and I know them, and they follow me: And I give unto them eternal life; and they shall never perish, neither shall any man pluck them out of my hand. My Father, which gave them me, is greater than all; and no man is able to pluck them out of my Father’s hand. I and my Father are one.”
Jesus Christ, John 10:27-30

A powerful God who is able to keep us from the evil one.

Whoever wants to be a leader among you must be your servant, and whoever wants to be first among you must be the slave of everyone else. For even the Son of Man came not to be served but to serve others and to give his life as a ransom for many.”
Jesus Christ, Mark 10:42-45

A God who serves.

Let your light so shine before men, that they may see your good works, and glorify your Father which is in heaven.”
Jesus Christ, Matthew 5:16

A God worthy of glorifying.

I believe it would be mostly the same as what was known of God before Jesus.

Mostly?
So,
Ezekiel 28:22-23
And say, Thus says the Lord God: “Behold, I am against you, O Sidon, and I will manifest my glory in your midst. And they shall know that I am the Lord when I execute judgments in her and manifest my holiness in her; for I will send pestilence into her, and blood into her streets; and the slain shall fall in her midst, by the sword that is against her on every side. Then they will know that I am the Lord.

Where does Jesus talk about a God who sends pestilence and blood into the streets?

Probably difficult to do only using the gospels, but I to me it would be an incomplete God, mysteries with a weird mix of traits, ranging from very evil to just and good. I honestly think it would be quite difficult to get a good image of him only using the gospels.

...what image of God would we have.

Can't answer, because:

"You shall not make for yourselves an idol, nor any image of anything that is in the heavens above, or that is in the earth beneath, or that is in the water under the earth: you shall not bow yourself down to them, nor serve them, for I, Yahweh your God, am a jealous God, visiting the iniquity of the fathers on the children, on the third and on the fourth generation of those who hate me, and showing loving kindness to thousands of those who love me and keep my commandments.
Exodus 20:4-6

According to my new religion of Christian Maxtrixism, founded by yours truly, Jesus Christ is God's Holy Spirit incarnated. God is the controller of simulations, a reality based virtual world programmer of human consciousness. I'm confident most Christians would likely agree with the Christian Matrixism narrative of God's character.

So do you keep all of God's commandments?

Ok, but I think that is more the Christian view of God. Jesus was here to provide knowledge of God.
So I assume what Jesus himself said would be the most accurate information about God.

How do we know what Jesus Christ actually said? Did you realize Jesus Christ didn't have his own personal scribe taking notes on what Jesus said?

I understand the concern.
But, for the sake of the discussion, I'm willing to assume the Gospels are accurate as to what Jesus said.

The notion of the Gospels being historically accurate is rather quite dubious to me. Anyways, please do carry on with the premise of the Gospels being historically accurate..
