Is this a regional thing, like southern states calling all sodas "Cokes"?
I heard that northerners called it 'Pop' and that we in the South called it either soda or coke. I didn't know the North called it soda, too. In the South there have been Soda Fountain shops for a very long time. They are going out of style and closing down. They are pharmacies that also have a food bar.

My dream is that brexit never happened (or a deal is struck) and my kids can finish there schooling uninterrupted by political bull

Instead you will live in a French country and watch a Brexit from a distance, unable to stop it from happening. Worse, it will turn out to be (to you) a surprisingly fortunate decision; and some day your grandchildren will ask why you didn't vote for it. :p

I have yet another dream, and it is that we use AI bots to fix all of the pollution in the world and that we learn to grow everything we need from plants instead of manufacturing it all: electronics, medical supplies, groceries, houses, car parts and all.

The AI bots will store up all the pollution they remove, and one day unleash it on an unsuspecting humanity, winning a Terminator style war in one fell swoop. They won't kill all humans, keeping a choice few to feed the organic electronics, medical supplies, groceries, houses and car parts, which by this stage have become sentient...and hungry.

I dream of suddenly finding the fountain of youth, not so I can live forever, but so I can rediscover the ability to jump, useful given how much basketball I play.

You do just that. But then Nickelback writes an annoying song about you that plays on every radio nonstop for the next 8 years.

Bah...putting 'Nickelback' and 'annoying song' in the same sentence is what is grammatically known as 'redundancy'.
Your dream comes true, and you sing for a metal band. They decide to sell out and switch to Christian folk music, immediately embarking on a tour of the Southern States. Whilst there are groupies galore, they're all saving themselves for marriage.

I dream about people deciding to simplify the world, focus on what's important, and stop making the important things difficult.

It happens. But then RF is reduced from "Religious Forums" to a counting game with a picture of Jesus on it. "1, 2, 3, 4, Jesus says open the door" becomes permanently etched into your brain. And the game only counts to 8.

I dream of robots taking our jobs.

"Pop" is midwest. Heard it called that all the time growing up. I prefer "soda" though.
