Having actually eaten possum in my very distant past, I do not recall how it was prepared or with what it was served. I would go with a nice braised polenta, sauteed asparagus, sauteed mushrooms and a lovely spinach salad. But given my choice, I would let the possum go on the way to the store to buy a nice thick steak to go with the previously mentioned sides.
One showed up in Brooklyn a few months back and
created a panic.
