On a more serious note, in earlier times it was probably because they needed something to kill the baddie with. They chose something that isn't normally used for bullets, silver, to make it seem more... exotic. As for today, it's used as a callback of sorts to the earlier incarnations of these creatures.
Silver is associated with purity, IIRC.

Interesting point. They used to drop a silver coin in water they were storing to keep it fresh. Some people take colloidal silver. It does kill germs.
One man turned blue from taking to much colloidal silver; but he claimed it did cure his ailment ... Inadvisable solution to the problem however.
