Assuming that you are asking why God created us, then IF we are created by a God, I think he is testing his ability to create increasingly complex and interesting things without having them self-destruct.

Also, you HAVE to trust your mind; you have no choice.
Anything that appears to be inspiration may not be inspiration.

I believe that "God" is everything, including this conversation. So, IMHO, God wanted to experience Itself by comparing Herself to something that was "not God". Man was as close as God could get to creating this "not God" entity for comparison (even we have to have a minute spark of God within us to even exist).
He does not trust in himself

It is, of course, unreasonable for humans to ask for a 'reason why' God created us, because God does not anthropomorphize human logic for reasons why this or that. For those that believe God Created all of existence including humans it is a brute fact that this happened.

Nonetheless . . .

The Baha'i view: The existence of our physical existence including humanity is the Creation that reflects the attributes of God, and have existed eternally with God as a shadow reflects the object. For humanity is an evolving physical and spiritual evolution reflecting the attributes of God. There may be many if not an infinite worlds and possible universes in Creation,

Personally, I believe that is within most to believe there is a superior entity, something almighty that could look over us in moments of despair, the probability of a miracle when we are hopeless (which at some point brings up the question os "is human kind the product of god? Or is it the other way around?"). As a deist, the way I see god (because every deist has his/her own definition of a god) is as an entity that created the universe and then just waited for life to take its course (big bang, earth, evolution).
So life takes its course and watches it like watching tv

My answer would be that the false god, who is ignorant of the perfect Father, created what he thought was the an image of the Father as a light he could have control over. The Demiurge's imperfect universe is reflected in the imperfect human made by the imperfect (devil) who see's himself as god with no one above him.

The risen Jesus tells John:
"And he said to the authorities which attend him, 'Come, let us create a man according to the image of God and according to our likeness, that his image may become a light for us.' And they created by means of their respective powers in correspondence with the characteristics which were given. And each authority supplied a characteristic in the form of the image which he had seen in its natural (form). He created a being according to the likeness of the first, perfect Man. And they said, 'Let us call him Adam, that his name may become a power of light for us.'- Apocryphon of John

When man received his spirit (from transgression), it was a gift from the Father to see the error of the false god, and to seek the heavenly perfection of the Father (true God).

The false god is jealous, and wants man to follow him. The Father is love which isn't jealous of anything, since he is perfect. We were given the choice what to follow to continue to either keep our gift of awareness, or to lose it through ignorance of (spiritual) perfection.

Matthew:
48 Be ye therefore perfect, even as your Father which is in heaven is perfect.

The 3 books I have found for the best answers to how and why the beginning came about, is the Apocryphon of John, the Gospel of Truth and the Sophia of Jesus Christ. They get very in depth of spiritual knowledge of Christ (gnosis) answering questions the Bible doesn't.

I like the perspective image they produce.

It appears the Gospel of Thomas says something of the same about spirit not being of gender.

Thomas says more clearly earlier in the text then in it's final verses that men and women are equal. It says the world does not have full understanding until male and female are regarded as one and the same- so that male is not male, and female is not female.

I believe your mention of Christ as appearing (to John) as a multiple image came from the Apocryphon of John and not Philip.

Maybe, but I'm pretty sure it was less specific than appearance to an individual. May have been the Gospel of Truth I'm thinking of.

I don't believe that God did create us. . . yet! And while it remains probably the most foundational ideas of mono theism, that we are 'created' in the image and likeness', I find it implausible, given the obvious moral and spiritual limitations of human kind, that while being the most destructive and self destructive of all species we should take license to think so. That being said, the prospect of some as yet undefined and unrevealed path of individual moral progress could very well make it so. Until then, I see our species an an unfinished work, yet to be 'created' in full.

We are a correction from a mistake. What god would give an experience of awareness then take it away? One who who is on the same path. What god would create a system (physical) that decays to nothing? A god who is imperfect and ignorant of infinity. The perfect offers the imperfect the gift of eternity.

I agree. Not every person saw Christ the same. It was the spirit (mind) that saw what he was. The poor saw him as a great reflection of a poor person. Yet the emperor saw him him as a great power that made him respect such power. The devil even perplexed by his knowledge. In the end, Jesus gave them the flesh that they desired, with nothing in it.

Jesus took them all by stealth, for he did not appear as he was, but in the manner in which they would be able to see him. He appeared to them all. He appeared to the great as great. He appeared to the small as small. He appeared to the angels as an angel, and to men as a man. Because of this, his word hid itself from everyone. Some indeed saw him, thinking that they were seeing themselves, but when he appeared to his disciples in glory on the mount, he was not small. He became great, but he made the disciples great, that they might be able to see him in his greatness.- Gospel of Philip

We have to understand that the "field" we are in is not ours.

(21) Mary said to Jesus, "Whom are your disciples like?"
He said, "They are like children who have settled in a field which is not theirs. When the owners of the field come, they will say, 'Let us have back our field.' They (will) undress in their presence in order to let them have back their field and to give it back to them. Therefore I say, if the owner of a house knows that the thief is coming, he will begin his vigil before he comes and will not let him dig through into his house of his domain to carry away his goods. The flesh depends on the spirit and not the other way around.

John:
It is the spirit that quickeneth; the flesh profiteth nothing: the words that I speak unto you, they are spirit, and they are life.

We hate the flesh and the creator of it. We cannot have two masters.

You know, what your asking is a two folded question.
So do you mean now, as being created in this body of flesh and blood.
Or do you mean, back, when God created us, of the Spiritual body.

Before God created this body of flesh and blood, we had spiritual bodies.

When Satan and his angels rebelled against God, Then God took clay of the earth and formed a man in the likeness of himself and the angels and put in the man that he had formed from the earth, The spirit which gave life to the man, which God formed from the earth.

You know, even God made himself a body of flesh and blood, of Christ Jesus and God put himself in the body of Christ Jesus, to be born of a woman, Mary
Therefore God will not put us thru anything that he, himself will not go thru. Christ Jesus face everything that we face and more.
Satan threw at Christ Jesus everything he could to bring Christ Jesus down to his level. But Christ Jesus over came everything that Satan could throw at him.

Even to the point of the cross, Where as Satan thought that he had defeated Christ Jesus at the cross, Satan soon realized, That he didn't defeat Christ Jesus at the cross, But Christ Jesus defeated Satan at the cross.

Everyone who comes into this world, must be born by a woman. By this blocks off Satan and his angels, that they can not enter God's kingdom of heaven.

But as it is, Satan's angels tried to take the short cut, in trying to reproduce themselves by getting women pregnant,
This you will find in the book of
Genesis 6:4. How the sons of God, this being angels of Satan's, came unto the daughters of men and they had children to them.

See to enter the kingdom of God, you must be born again of the water and of the Spirit. To enter the kingdom of God.

Unto which Satan nor his angels did not do.
only trying to skip over of being born of a woman, tried to reproduce themselves by making women pregnant, which did not work out. Only creating hybrids beings, which were Giant's.
When the sons of God, these being the angels of Satan's, came into the daughters of men, to try and reproduce themselves, only made hybrids beings which were Giants.
Genesis 6:4.

In your belief why God created us
I believe God created us because God is Love and He desires to share His love, goodness, beauty, joy, and creativity with us. Our purpose, meaning, and satisfaction comes through responding and loving God now and forever.
