There seems to be a pattern of people leaving Islam and then getting into unfortunate situations. This guy points out some strange coincidences in the video posted below. Of course, I'm aware that he's using the false dilemma fallacy, but still...

I believe it is never a good idea to oppose God.

However there are millions of Christians in good health and more than likely atheists as well.

How about Islamic converts to Christianity? Are they all sick. I only know of one from Afghanistan and she is in fine health. I believe what we are seeing here in the video is a priori thinking and then looking for examples that support what the person wishes to belieive.

I think it is more of anyone who becomes a Christian becomes an immediate enemy of Satan. We all know Satan has his ways of trying to break down Christians and destroy them. Only faith can defeat him and most Christians don't know that or understand it

2 Peter 4
12 Dear friends, do not be surprised at the fiery ordeal that has come on you to test you, as though something strange were happening to you. 13 But rejoice inasmuch as you participate in the sufferings of Christ, so that you may be overjoyed when his glory is revealed. 14 If you are insulted because of the name of Christ, you are blessed, for the Spirit of glory and of God rests on you. 15 If you suffer, it should not be as a murderer or thief or any other kind of criminal, or even as a meddler. 16 However, if you suffer as a Christian, do not be ashamed, but praise God that you bear that name..

To answer the specific OP question, leaving permanently is according to the Islamic scriptures to be cursed. The question about what people should do about this varies depending on the Islamic school and the historical period. For example:

Other Qur'anic verses[36] refer to apostasy. According to professor of anthropology Dale F. Eickelman, some verses in the Quran appear to justify coercion and severe punishment for apostates.[37] In contrast, legal historian Wael Hallaq writes that "nothing in the law governing apostates and apostasy derives from the letter" of the Quran.[38] There is no mention of any specific corporal punishment for apostates to which they are to be subjected in this world,[39][40][41] nor do Qur'anic verses refer, whether explicitly or implicitly, to the need to force an apostate to return to Islam or to kill him if he refuses to do so.[42]

Apostasy in Islam - Wikipedia

I believe leaving Islam for apostasy could be a curse but leaving it for Christianity is a blessing.

I believe seeing Satan behind everything undesirable is superstitious. Illness can be used as a judgement by God and I have seen that happen and in the case of Job it can be a test promulgated by the devil but sometimes it is just a person's destiny. Unless a person has a direct word from God about it, I believe it is irresponsible to say it is one thing or another.

Well, that's not what I implied. What I implied is that Satan is definitely behind temptation and deception of Christians. He goes about like a roaring lion looking for someone to devour.

Actually Muslims kill those that try to leave Islam. The death penalty is carried out against those that leave Islam in Afghanistan, Brunei, Iran, Mauritania, Qatar, Saudi Arabia, Somalia. United Arab Emirates, and Yemen.

I believe those that do that are committing murder and God will judge them harshly for it.

I believe that is quite correct but that is only a general statement and does not allow us to automatically attribute any particular misfortune to it. Usually the devil looks for a weakness. He knows he can't attack a person where they are strong. Sometimes one can tell by spiritual perception when under attack. I went two years putting on the armor of God every day. I don't need to do that now but that does not mean he has stopped trying and he managed to come up with a new trick although I caught him and figured it out.

Well, leaving Islam means cursing yourself.

Why?

Well, a curse means Allah's mercy is not upon you anymore. So the simple answer to this question is that Allah's mercy is upon each and every creature on earth. But on the day of judgment, it is our deeds that will save us from the torment of Allah. If you disobeyed Allah's commands, you shall be punished and if you respected, you shall also get your share of it.

The fact is that Islam is the religion chosen by Allah. So if you leave Islam, it means you have disobeyed the commandment of Allah and hence you shall pay for it.

I encourage everybody to repent to Allah and turn back to Islam. Islam is the proven way that can send us all to Jannah, Insha-Allah.

I believe that concept is not justified by scripture.

I believe this is not a fact but a bias.

He never stops trying. He's a pesky devil, he is.

I believe no-one understands Allah better than a Christian.
Like all individual churches, religions and sects of whatever everybody of many diverse conflicting beliefs claim to know and understand God better than everyone else. There is a problem here, and it is one thing you have in common with the many divisions of Islam.

The saheeh Sunnah indicates that it is essential to put the apostate to death.

Al-Bukhaari (6922) narrated that Ibn ‘Abbaas said: The Messenger of Allaah (peace and blessings of Allaah be upon him) said: “Whoever changes his religion, put him to death.”

Al-Bukhaari (6484) and Muslim (1676) narrated that ‘Abd-Allaah ibn Mas’ood said: The Messenger of Allaah (peace and blessings of Allaah be upon him) said: “It is not permissible to shed the blood of a Muslim who bears witness that there is no god except Allaah and that I am the Messenger of Allaah, except in one of three cases: a soul for a soul (i.e., in the case of murder); a previously-married person who commits zina; and one who leaves his religion and separates from the main body of the Muslims.”

The general meaning of these ahaadeeth indicates that it is essential to put the apostate to death whether he is waging war on Islam (muhaarib) or not.
