I know there must be many different motivations, I am just curious why this is the last great, accepted predjudice.

I was referring to different disciplines in the legal field. I think you might be confusing someone (such as Pah) asking you to defend your position with outright persecution. Many people come onto this site from a background of surrounding themselves with like minded individuals. This is definitely the case for many of the fundamentalists we see here. These people have lived in a "bubble" where no one questioned what the man in the pulpit fed them each Sunday. Mind you, I am not saying that you are in this group (I don't know you well enough to make that leap), but I think you might be feeling a little of this effect.
When these people are first exposed to individuals that ask them to defend their statements, they take it as an assault on their belief system.
SOG is exactly right. As a matter of fact, I take more than a little glee in asking people that attack a given belief system from their own biased viewpoint to defend THEIR positions.
One thing going against the Catholic Church. It does not seem (to me - an admitted "outsider") that the RCC allows for any difference of opinion from its followers. In my opinion, this is exactly why Martin Luther led the flight to the Protestant religions. Obviously, they have the right to do this (it is their religion), but nobody bites back as much as someone that feels wronged.

If I seem to be living in a box, pick up a copy of the New York Times or any other notoriously liberal paper and see if you can find any unwarranted attacks against the Catholic Church. Twisting of information. Spins on a story, for the only, apparent, cause as to promote some sort of an agenda or crusade against the Church. Again, this is not directed towards anyone here.
