Question about Pie

Do you like pie?

What is your favorite kind?
Chicken and mushroom can be good. So can apple, if it is flavoured with cloves. But for fruit I really prefer to make crumbles, which I do with half flour and half oatmeal: better consistency and cuts down the amount of butter needed.

Very important to make pies with all butter puff pastry (the stuff made with vegetable fat is crap). But it seems to have vanished from the supermarket shelves since Christmas. Obviously the supermarkets have decided we are too fat/too poor/too unhealthy to risk it.

Meat and potato
Chicken and mushroom
Apple
Blueberry
Tarte tatin
Chicken and leek
Quiche
Fisherman's pie
Cottage pie.

Not necessarily in that order. Plus the cheat, the last two don't use pastry

Blackberry pie is the ultimate.
Blueberry is 2nd.

But if thinking broadly, chicken pot pie is fantastic.

The seasonally appropriate pie is the correct answer.

Blueberry pie after I go blueberry picking.

Apple pie after I get apples from the local orchard at market.

Pumpkin pie after I get... er... a can of pumpkin instead of a real pumpkin because when I try that it tends to be a disaster.

Jesus! What the hell is that?

Some sort of Devil's quiche, by the look of it.

The Devil makes damned good quiche...

I had a piece of it (in Chicago) when I was 13, and I still remember it...

But, my favorite is a tie between French silk and lemon meringue.

I like anything with cranberries in it.

There is a place way out east in rural Long Island called Briermere Farms, which is a fruit farm/bakery that grows most of their own fruit for their fresh baked pies. Briermere pies are famous, and a lot of restaurants throughout Long Island and in New York City buy their fresh pies from Briermere.

My favorite Briermere pie is a seasonal one they make with pears and cranberries. It is pie to die for. If you want to be sure of getting one you have to call ahead and reserve one for yourself because they all usually sell out the day a batch of them come fresh out of the oven.
