There is crime of having sex with another man’s wife. Why, do you do that?
Yes, that is morally despicable but it's not adultery. Adultery requires the adulterer be married, that's why it's a crime in the first place,

“My son, keep your father’s command, And do not forsake the law of your mother. Bind them continually upon your heart; Tie them around your neck. When you roam, they will lead you; When you sleep, they will keep you; And when you awake, they will speak with you. For the commandment is a lamp, And the law a light; Reproofs of instruction are the way of life, To keep you from the evil woman, From the flattering tongue of a seductress. Do not lust after her beauty in your heart, Nor let her allure you with her eyelids. For by means of a harlot A man is reduced to a crust of bread; And an adulteress will prey upon his precious life. Can a man take fire to his bosom, And his clothes not be burned? Can one walk on hot coals, And his feet not be seared? So is he who goes in to his neighbor’s wife; Whoever touches her shall not be innocent. People do not despise a thief If he steals to satisfy himself when he is starving. Yet when he is found, he must restore sevenfold; He may have to give up all the substance of his house. Whoever commits adultery with a woman lacks understanding; He who does so destroys his own soul. Wounds and dishonor he will get, And his reproach will not be wiped away. For jealousy is a husband’s fury; Therefore he will not spare in the day of vengeance. He will accept no recompense, Nor will he be appeased though you give many gifts.”

Yes, but this isn't the Torah. Mishlei isn't defining what is and isn't legally considered criminal.

It is adultery and at least covetousness of your neighbors wife. You don’t see that as sexual immorality?
Yes, it is sexual immorality. I see sex before marriage as sexual immorality. But it doesn't make it adultery or even a criminal act. You have to commit a specific crime for it to be legally actionable. While this may be grossly immoral, it's not, technically speaking, adultery.

Leviticus 20 describes adultery and says a man and doesn’t make any distinction whether married or not, what about women, no adultery if she isn’t married? She is innocent as you say? Don’t see it, it’s adultery any way you look at it. If you have sex with someone you become one with that person.

No, this is a foreign Christian understanding. Adultery applies to the woman. What you think of it isn't what matters here, what matters is what is halachically considered adultery and the woman in this NT scenario broke the law.

You, funny how when Jesus was writing on the ground they all left, wonder what He wrote that caused them to leave?
I'd wager it was something like this:

and when they realized he was messing around, they left, because bitul Torah.

No, it isn't. Adultery is betrayal of one's partner. If one has no partner, there's no crime.
““If a man is found lying with a woman married to a husband, then both of them shall die—the man that lay with the woman, and the woman; so you shall put away the evil from Israel.”
‭‭Deuteronomy‬ ‭22:22‬ ‭NKJV‬‬
And done!
