You have a few mistakes here.

Some animals change gender during their lifetime. Their gender isn't determined genetically.

Some animals are hermaphroditic: they produce both sperm and eggs.

There are species of lizards with only females. They reproduce by parthenogenesis.

Your statements about chromosomes is wrong: mammalian males usually have two different sex chromosomes with mammalian females having two of the same. Birds, however, are reversed. Reptile gender is often not chromosome dependent. Amphibians and fish often have gender that is determined by environment (but not always).

Once you get beyond vertebrates, things get more strange. Earthworms are hermaphroditic. In some species there is no real difference between sperm and egg: they are the same size and look identical.

And, of course, don't forget plants (some of which have male and female) and fungi (some species have more than 100 genders).

Here's the interesting thing.

I used to accept the cultural norm that sexes are pretty black-and-white. That is, they're a biological fact (as opposed to gender, which is a cultural construct). Then I started learning some things that began to erode at that assumption. First, in my college education as a biologist I learned that the ways in which humans do sex is pretty bizarre and non-standard as far as life on this planet goes. I learned that the vast majority of life on this planet is asexual, and that the vast majority of multicellular life doesn't exactly conform to dualistic notions of sex either. But even at that point, I was still of the thought that sex is something of a biological fact.

Then I took a diversity training workshop at my place of work within the last few years or so. When I took it, I was already fairly familiar with the diversity of human sexuality, sexual identity, gender identity, and so forth. I was not expecting biological sex to also be revealed as something of a social construct. I distinctly remember sitting there thinking the presenter was full of crap and that they weren't a biologist. Except then they started talking about biology and knew what they were saying. They asked a simple question - what are the biological characteristics of maleness and femaleness? Together, we all brainstormed the various things that make one a biological male and female. Once we had our list of primary and secondary sex characteristics, it became obvious really quickly that us assigning those characteristics in a dichotomous fashion to "male" and "female" was at least somewhat of a social construct. How much of a social construct it is, I'm still mulling over. But when the people we call "male" and "female" exhibit biological sex characteristics across the spectrum, I can't rightly say anymore that it's such a black-and-white issue.

Personally, I don't have much of a horse in this race one way or another. I don't care about sex, in both meanings of the term. It's not how I judge or assess individual persons, humans or otherwise. Whatever someone wants to call themselves, I'll respect that.

He made a note about sex saying that the only universal difference between male and female is whether they produce eggs or sperm. If the animal species is hermaphroditic, then of course only the male part produces sperm and only the female part produces eggs. This universal reality exists at least in the animal kingdom whereas a species is sexual as opposed to asexual. Most animal kingdom species are binary sexual and virtually all vertebrates are unisexual having male and female in separate bodies.

In humanity, male means sperm-producing and female means egg-producing in strict terms of biology. Women often put on make-up but that is not natural or sex-defining in nature. Men in American culture are obsessed with football but that is not a natural sex-definer either. That women produce milk, menstruate and bear children is secondary to defining biological sex in the human race. That men have penises and penetrate women sexually to impregnate them is still a secondary sex-defining set of traits specific to humans and all mammals.

Mother Nature is the ultimate reality. Child-bearing is not exclusive to the female sex. A deep voice is not exclusive to the male sex.
Mother Nature did not "slice and dice" a male seahorse as "a woman".

I don't know about most or all, but many homosexual men don't pretend to be women. A pair of homosexual men are still two biological males meaning they are each strictly a sperm-producer. A pair of lesbians are two biological females meaning they are still each strictly an egg-producer. Sex in nature is not strictly about continuing the species: it is also about pleasure.

The direction I'm taking is to The Truth: male is a sperm-producer in nature and female is an egg-producer in nature, there's nothing more to say regarding what the binary animal sexes really are. People have really made sex a complicated issue using the human model "to try to define sex". Male and female don't always work in nature as man perceives his own species to be.

I think the OPs point was that gender identification and sex are two entirely different categories.

But I might be mistaken.

I would like to be able to claim that all those Facebookers are only referring to their gender identification and not conflating that with sex, but well...
