And if two people have opposite beliefs, and they both know their right, they both must be right.

Do you know your religion is true?

If the answer is "yes", how do you know?
I do not understand the question; what do you mean by "true"?

My spiritual-religious system does not involve faith in fantastical afterlife scenarios or creation stories; the only faith required is faith in one's own abilities. The deities of my spiritual-religious system can be embraced and experienced by theists or atheists alike. Holy books are interpreted as combinations of history, allegory, metaphor, and esoteric insights about nature and human Nature; the primary purpose of reading them being to extract and utilize the strength, power, wisdom, and beauty contained within... and to draw motivation and inspiration to fulfill one's goals and ambitions.

What exactly can be considered "true" or "false" about any of this?

The purpose of any religious practice should be for the purpose of the expansion of consciousness.

Truth is a difficult thing to understand.
What we believe is what runs our lives, it is our truth.
Our beliefs change as we gain more experience and we speak and act differently.
What we considered truth yesterday may not be true for us today.
The only truth that exists is the truth that lies within each of us.
Because each of us is the truth.

No, I can only say I believe the basics are correct beyond reasonable doubt. A lot of the eastern masters I respect say you will only 'know' it is true when you experience it, and I am not there yet.
