Is Noahhide like a watered down version of Judaism? Not trying to sound like a jerk I just read a few paragraphs on Wikipedia and that's what it seemed like to me.

The Noahide laws are the Jewish laws that apply to Gentiles, yes.
Anyways this is a really tough question to answer because I'm already syncretic and exploring different options.

Judaism - but more for the culture than the religion. This is due to having known many Jewish people throughout my life and it generally being the one religion/culture that seems to consistently have overall positive benefits on individuals and the community. I can honestly say I wouldn't have minded being raised Jewish.
Yes, it could be thought of as 'Judaism Lite'; but like most faiths you get more out of it the more you put into it. In other words, it can be a full spiritual experience, to some.
Actually, it applies to everyone. People of Abrahamic faiths (mostly) have them covered, by default.

I would continue to study all religions. Reading and understanding what they Claim, Teach and what Validation in History they Provide.
Religions such as Islam, Truly have no Valid History. That is why I would never choose Islam.
For eXample - Islam Claims that- Before Mohammud, There were Islamic Gospels and Islamic Scriptures already here on earth.
ALSO islam Claims that- Before Mohammud , All of the Prophets of God were Muslims and taught ISLAM and the Storyline that is in the Quran. But every single one of these type of Islamic Claims are proven to be completely False and Without a single shread of any evidence, Anywhere at any time. nothing.
I choose to study all religions, Islam, Judaism, and Christianity. Hindu Buddha - all of them ,that's' my choice.

Probably a devotionally-oriented branch of Mahayana Buddhism as I am in agreement with the basic philosophical tenets of Mahayana Buddhism on the nature of self and reality which probably does put me somewhere outside the bounds of Christian orthodoxy. However on a ritualistic and cultural level that stuff is too foreign for me. My consciousness is already too embedded with Christian imagery, concepts, stories, experiences, and symbols. I tend to re-interpret those things or put them together in different ways than most people, but it's just part of how my mind conceptualizes and even comes up with new ideas. It's in my blood. And I'm very Western, too.
Orthodox Christianity or Zoroastrianism.

I'd probably go back to neo-Paganism, mostly and largely because of the reverence of nature.

I am a Recovering Catholic and a Satanist.
I am quite happy as a proud member of the CoS--but I reckon if I HAD to switch to another religion it would be Wicca. Or Taoism.
Anything that encourages adulation of the Self--and espouses the idea that we should enjoy life here to the fullest, since, afterall, it is the only one we can be sure that we have.
So what a shame to waste it by worshiping a false God, like Yawheh.
BTW: Satanists do not worship anything or anybody. Just so y'all know; there is a lot of misunderstanding about the CoS.
I like Wicca, since it is nature-based. Really not that much different than many of the Native American religions.
Some of the folks in the CoS feel the Wiccans ARE a bit wussy, though. LOL. We call their alleged magic "fluffy bunny magic."
They need to learn to embrace some of the Black Magic, like we do, as it can be very empowering.
