Vesta is my favorite Roman deity.
And Hestia is of of my favorite Greek deities. I have researched her priestesses (the Vestal Virgins, the only female priesthood in Rome) as well as Vesta...like a lot. One of my "obsessions". If my beliefs were different I might honor her... And going by the Jung archetypes and all that I can totally relate to the Hestia/Vesta archetype. Some of that info can be read here.

Artemis and Persephone, for me, and I'm starting to like Dionysus. I've also begun studying others, like Apollo and Mercury, that seem to have a lot of potential.

The Roman deities had actually existed early on in their history.
Some were clearly identified with Etruscan deities, couple of centuries before any of Roman deities were assimilated with the Greek deities. Tin was the supreme god, wielding the thunderbolt. The Etruscans had probably derived this god from Zeus. Juno was clearly derived from the Etruscan Uni, 2nd of the Etruscan triad. Even more clearer is Minerva being originally derived from the Etruscan goddess Menrva. Ani = Janus Nethuns = Neptune Selvans = Silvanus Voltumna = Vertumnus
