It's because that's when the Pagans worshiped their sun God. Sense most people were Pagan back then, the day got switched.

The important thing is the rest day, of course...but for me, the specific day of the week does matter. I'd be out of sync with all the other Jews around the world, otherwise. Plus, seeing as the word for Saturday in Hebrew is Shabbot, it would seem a bit odd to have it on a different day.

I agree, the day does matter. What's important to God should be important to us. God wrote the 10 commandments with His own finger in stone. He wants us to keep Saturday holy, not a day of our choosing such as what the Catholic church instituted with Sunday observance.
