I'd rather call Islam the religion of Justice. Allaah 'azza wa jal said: "And thus We have appointed you a middle (wasataa) nation, that you may be the bearers of witness over the people and (that) the Messenger may be a bearer of witness over you..."[2.143]
It is mentioned in Saheeh al-Bukhaari, of Abee Sa'eed al-Khudry (radhiya Allaahu 'anhu) said: the Prophet-sallaa Allaahu 'alayhi wa sallam- said: "al-wasat (the middle) al-'adl (is justice)". Walaahu a'lam.

I actually think that saying Islam translated as 'Religion of Peace' effectively complicates what is really, linguistically, much simpler. On of the names of God is As Salaam, which as scholars have suggested can not only be translated as 'The Peace', but should be understood as 'The Source of All Peace', i.e. Peace proceeds from Allah, manifest within creation by his name As Salaam. Muslims and Islam are then those who submit or submittal, respectively, to the source of Peace. To merely say 'Religion of Peace' is reducing the data with no useful result.
