There is no priesthood in Christianity, except the priesthood of the believer. Bishops and deacons are mentioned however. In the old testement a priest was set apart to offer sacrificices to God. Since Jesus made the ultimate sacrifice of himself he is our high preist. It talks about it alot in Hebrews-

If they're not called priests, then what are should they be called? They are still celibate for the most part, at least in Catholicism. The point is that they are celibate, and so how does that fit into the male/female analogy.

The word for "priest" is presbyter. It is often translated "elder." If you research the etemology of "priest" in English, you'll see quite easily that it comes from this Greek word directly into our language...

The NT also employs may technical words associated with the role of the presbyter, like litergia (service // liturgy) and so on.

No, presbyter means "older person" or elder and hiereus is the Greek word that gets translated as "priest" in the NT and archiereus is translated as "high priest". Our word hierarchy (priest high) comes from the these Greek words and denotes a system of ruling order.
