I'm a single father and I really need help getting some basic recipes together for easy meals. Does anyone have any recipes or meal ideas when they just want a quick and simple meal when they get home?
I know some people get creative with Mac and Cheese.

The crock pot is a great thing if your a single parent put it on in the morning before you go and when you get home it is ready. I will put some thing together and send them to you.

Jacket Potatoes are good, and you can vary them with different toppings!
Pasta is also a quick and easy the only problem is, i get very bored with these two very quickly.

http://www.cooks.com/ http://recipes.bhg.com/recipes/?_requestid=289500 One of my favorite recipes is from the South Beach Diet Cookbook. It's called Rosemary Chicken. It's super easy but so impressive. 1-4 boneless chicken breasts 1 tbl. minced garlic 1/2-1 onion chopped 1-2 tbl. rosemary 2 tbl. oliv oil 1/4-12 cup chicken broth Heat oil in a skillet on medium high. Put chicken breasts in and cook covered for 5 minutes. Turn breasts, add the onion, garlic and rosemary and cook for 4. Pour in the broth, cover and cook for another 5 minutes on medium heat. Done.

Stir Fry - Very quick, very easy and you can use a variety of veggies and meats to keep it interesting.
Burritos - Quick and easy... especially if you have a toaster oven. Pasta - Change up noodles and sauces regularly. Also add different veggies and spices to the sauce to thicken it up. |

I made some fried chicken tonight. One of my favs. I also got two flour tortilla's, put them on a hot pan for a minute, put cheese in between them and put them in the oven for 5 minutes. The kids loved it.

Add in shreded chicken or some ground beef they love that too....My son does.
