Default This Thread is a Gluten-Free Zone

So I just got diagnosed as having Celiac's disease! woot! I'm in some desparate need of help finding gluten-free products, recipes and tips. Plus, I don't know anyone else who can't eat wheat, rye or barely, so it's kind of lonely.

So, if you're allergic to grains, gulent intolerant or have Celiac's disease, or if you know someone like that, give a shout!

Peace!

My poor, poor wife. I will see if can get her to log on, she's had a tremendous amount of experience with this since she was diagnosed.

My aunt has that. There is a food store near her house where she can buy macaroni, bread, and other stuff without any gluten in it. For a long time, my mom thought she had it too, because bread and stuff with wheat in it made her sick, but then she slowly started eating it again and now it's not a problem. I wonder if you can grow out of it...

Wow! I hope so! I've found some awesome pasta and cereal (who knew that Rice Krispies and Corn Flakes weren't gluten-free?!), but gluten-free bread I've found just doesn't cut it. Anyone got a good recipe/brand?

There is a local bakery here in Utah called Charlotte's that makes a pretty good gluten free bread. I don't have celiac, but I've eaten Charlotte's rice bread a few times. Being local though I doubt you'll be able to find it where you live. I wonder if a health food store near you might be able to special order some? They have bread, hot dog and hamburger buns, ciabatta, sugar cookies, cupcakes, pie crusts ... tons of stuff.

I imagine you can be gluten intolerant and outgrow it, but you cannot outgrow true Celiac disease. It is an inherited, genetic auto-immune disease.

I dont know except there are "gluten" free sections in the health food stores like Sprouts and even though im not on a gluten free diet I bought some gluten free shortbread cookies(at Sprouts) and I swear they were the best tasting shortbread cookies I ever ate.

(shortbread is my favorite though)

What is happening in the world anyway where people have to figure out what is gluten and high fructose corn syrup and sugar alcohols and saturated vesrus non saturated and blah blah blah.

Why cant we all just eat an apple and some cheese and some meat sometimes or a piece of bread with butter on it?

Love

Dallas

Gluten-free shortbread is, indeed, delicious. I just made my own, using mostly cornstarch. Real bread, however, still remains elusive...I can't find an edible store-bought one and making it myself hasn't gone well, either. I can't get it to rise right!
Kay, d'you think Charlotte's would deliver to Ireland? :P
