Right next door to my office is a darling old Craftsman style house renovated into a cozy restaurant called, The High Street Cafe. They have the BEST beer, cheese, bacon & potato homemade soup...I just ordered some to pick up. I'm hoping at some point I can sweet talk someone into giving me the recipe.
If so, I'll be sure to share it with you all.Are there any great soup recipes you'd like to share? |

I LOVE soup! I promise to come back to this thread with yummy recipes, but for now I will tell some of the soups I love. Corn chowder, broccoli cheese, chicken tortilla, vegetable beef, seafood chowder (New England and Manhattan), potato cheese bacon (the one you mentioned above), egg drop, hot and sour, squash...more later!

I adore soup.
Here's a favorite. What you need (for a medium-sized pot): Some basil and thyme About 5 large red potatoes, cut in thick squares (about 2inches or so) A large white onion A package of fresh mushrooms (about 20 small white cap, sliced) A small bag of baby carrots, whole Two celery sticks, cut thick A can of Campell's bisque tomatoe soup (condensed) A half a stick of butter One can of stewed tomatoes Two cloves garlic Three tablespoons of lemon juice **Optional*** - cooked meat of your choice. I like to fry up some Italian sausage in olive oil with some of the onion and mushrooms, and add everything to the soup.*** I bring about half a pot of water to boil with some salt and a few shakes of dried thyme and basil, add all the veggies - but only half the onion (chopped). I used the garlic as whole cloves. After the potatoes are soft I reduce the heat to low and add a lot of salt and pepper, the lemon juice, and the other half of chopped onions. I also add meat at this point, grease and all (except if it's really really greasy, like a pound of fatty hamburger meat). If the grease is too thick, just add some milk (maybe half a cup). Yum YUM YUM

She prefers it without the sausage, but that just leaves more for me. The sweetness of the Italian sausage really makes it good. The trick I think is to lightly fry the meat in butter or olive oil (seasoned how you like it) and let it simmer for a while in the soup. I cooked this yesterday and let it simmer on low heat for two hours. Can't do it too long or all the veggies will disappear. ![]() Edit: I cook chicken breast in light olive oil and salt and pepper with a little bit of rosemary and lemon zest. Substitute the can of tomato soup/canned tomatos with a can of cream of mushroom and a can of cream of chicken. Add a cup of milk and wha-la! Daddy's badass chicken soup. Substitute also the basil and thyme with rosemary in the water.

Ummm! Soup! I love clam chowder, and have figured a way to make my own using nut milk instead of milk. I really can't tell the difference. Well, with hazelnut milk it actually tastes richer... Booko's Beef & Barley Soup .5-1 lb beef, cut in pieces 1 large onion 1 cup carrots, cut in pieces 1 cup celery, cut in pieces 1 medium tomatoes, peeled, or 1 can tomatoes 1 c cut green beans (can be frozen) 1/3 c. barley 1 clove garlic basil marjoram savory salt & pepper Brown the beef, then add onions and cook till onions are transparent. Add water and tomatoes and seasonings and simmer until beef is done, but not particularly tender. Add carrots, celery and barley and cook until barley and veggies are done. Add green beans for the last 5 minutes. Serve with homemade bread. ![]() Hm...now I have to find the recipe for Morrocan lentil sou |
