Chicken Coconut Curry Soup ![]() 2 cups chicken broth 1 (14 oz.) can unsweetened coconut milk (although Soya milk could be used in place) 1/2 tablespoon Madras currrrrry powder 1 (or more) Jalapeno chili, seeded and minced 4 boneless, skinless chicken breast halves (two whole) cut into 3/4" pieces 3 tablespoons fresh lime juice 1/4 cup chopped green onion 1/4 cup chopped fresh cilantro 1 cup freshly cooked white (or brown) rice 1 teaspoon salt, or to taste Freshly ground pepper to taste 4 Lime wedges (from 1 whole lime) Bring chicken broth, coconut milk, currrry powder and chili to simmer in heavy medium saucepan over medium heat. Add chicken and simmer until chicken is just cooked through, stirring occaisionally (about 5 minutes). Remove from heat and add lime juice, green onion, cilantro, rice, salt and pepper to taste, stirring to combine. To serve, ladle soup into bowls with a lime wedge in each. Serves 4. I have to admit this will be a regular dish around the Satanic Hampsters for some time to come. Next time I am going to double the lime juice and curry power. A fabulous 15/10. ![]()

Needs more spices! I should try making it with some tofu and potatoes and MOAR SPICES and see what happens.

We need to eat together sometime. I burned my tongue for 4 weeks with chili powder once. Chicken mushroom chili pasta spirals... my Indian roommates favourite...
