Okay, I really keep thinking that I want to go vegetarian (not vegan), but I don't even know where to start. Does anybody have some really, really good vegetarian recipes they'd like to share?

Ummmm........
Spaghetti with simple marinara sauce? And parmesan cheese on top if you're not vegan? How about a peanut butter and jelly sandwich? ![]() Macaroni and cheese with broccoli and cauliflower - baked (for that crispy top)? There's plenty of soups and stews with lentils and beans that are hearty as main course dishes. I love this veggie-potato latke recipe that is a huge hit with our family (just scroll down to my post): Vegetarian/Vegan recipies Let's see...........kung pao tofu (I've even made pad thai - veggie style with tofu), spinach frittata, basil/mozzarella/tomato calzones, cajun beans and rice, vegetarian jambalaya........ OH!OH!OH!!!!! Eggplant parmesan is another huge hit at our dinner table! I slice the eggplant thinly after peeling it, bake the slices in 350 degree oven for about 15 minutes to dry them out a little, and then layer them with marinara sauce and mozzarella cheese (lasagne style). I then bake the dish for about 30 minutes covered and 15 minutes uncovered. There are plenty of ways to do eggplant parmesan but this is just my way of doing it. That reminds me - I haven't fixed the last dish in months. It's probably been more than a year since I last made it. There are plenty of resources out there for good, hearty, and tasty vegetarian meals. The best ones are more Eastern IMO........so check out Indian and rural Asian cuisine cookbooks to give you the best kinds of inspiration. And remember - look for RURAL Asian recipes, not the deep-fried, heavily sugared and salted chop suey dishes that we're familiar with most often in the States. Help any? ![]() Peace, Mystic |

All of the above! Probably Mexican and Italian more than anything else, but I'm up for whatever. I just need main courses mostly.

For a fusion dish, I've duplicated a dish from a Seattle restaurant called "Cafe Flora" where they made "Oaxaca tacos". Corn tortillas filled with a mixture of mashed potatoes with garlic, rosemary and sauteed bell peppers and onions, topped with smoked mozzarella and crumbled feta and served on a bed of spiced black beans. Even my "meat and potatoes" father in law goes back for seconds on that one.
