Everyone has their own meatloaf recipe, and if you're like me it's never exactly the same twice. I made meatloaf yesterday and here's something close to what I used:
My Meatloaf 2lbs ground turkey 2 cups uncooked oatmeal 1 cup salsa 1 egg 1 tablespoon worcestershire sauce salt, pepper, other seasonings you like (I use Nature's Seasonings) Combine all, add more oatmeal if needed to be firm, drizzle extra worcestershire sauce on top if desired. Cover with foil and bake at 350 for about an hour. Remove foil during and add ketchup to top of meatloaf for last 10 minutes or so to brown. What's your meatloaf recipe?

I'd always used Betty Crocker's recipe that usually was a hit:
1 large egg 3 pieces of bread torn into small pieces 1 cup milk 1 small diced onion 1 tsp worcestershire sauce 1 tsp salt 1/8 tsp pepper 1/2 tsp ground mustard 1/4 tsp ground sage 1.5 lbs ground beef ketchup Mix together and mash with hands.............kids love mashing squishy beef with you.........and put in ungreased loaf pan. Cover with ketchup, or you could use BBQ sauce if you like, and bake at 350 degrees Fahrenheit for about an hour to 1 hour 15 minutes, depending on how hot a meat thermometer reads when inserted (should read at least 160 degrees Fahrenheit). You're right, I never make meatloaf the same way, but here's an approximation:
1.5 -2 lbs ground sirloin or round, or ground bison 1 c. oatmeal. 1 egg 1 small to medium onion, chopped fine few stalks celery, chopped fine 1/2 apple, peeled, cored and chopped salt and pepper to taste 2 cloves garlic (!), crushed Seasonings vary widely, but most often I use: 1 t. marjoram 1 t. savory (well, something like that -- I don't exactly measure stuff) If I have it handy, I put strips of bacon on the top and cover that with ketchup. Otherwise, just the ketchup. Bake for 1 hour at 350 degrees. Variations: To make "Greek" meatloaf, season with cinnamon and nutmeg instead. It tastes like pastitsio, w/o the ziti. If you want to get really fancy, make a lemon sauce with lemon juice, water, and cornstarch. To make it even more Mediterranean, replace some of the ground beef with ground lamb. For a more "Italian" meatloaf, I leave out the apples, add a small chopped tomato, and for seasoning I use oregano and basil. If you want, you can toss in some parmesan or romano.
